How do the GOP and Democratic national conventions decide their nominee?

How does a candidate with less delegates get nominated? For example, how would Ron Paul or Hillary Clinton get nominated at their conventions despite going in as delegate-underdogs? I have heard that Abraham Lincoln went into the GOP convention with only 10% of the delegates and came out a winner.

Delegates can vote how they choose most of teh time. They ussualy will not vote for someone if it will pi9ss off the masses tho.

But lets say something happens and everyone in the country that is a republican said "wow, I really like Ron Paul better"
Then it would be the best thing for the republicans to not nominate McCain.

Same with Hillary at the DNC.
